PANNEKOEK – PANCAKE – THE ONLY RECIPE you’ll need – Normal Kitchen
1 cup self raising flour
(or baking flour with 1/4 t baking powder)
1 cup milk
1 egg
1/2 t salt
1 t oil
Mix and bake in a round pan with 1ts of oil per pancake.
Pancakes are super versatile.
You can use any filling imaginable, but as a very traditional South African snack – we just sprinkle cinnamon sugar over each one as they are backed and stack them all on one plate.
Personally, I love to spread a bit of butter onto each baked pancake before I sprinkle the cinnamon sugar and.. yes, add a dash of freshly squeezed lemon (try lemon on one of them, you’ll be surprised).
For the Cinamon Sugar Mix:
You can mix sugar and cinnamon (1/2c of sugar with say 1tsp of cinnamon) and sprinkle onto every freshly baked pancake.
You are welcome to mix dried herbs, of finely chopped spring onions into the batter – a recipe has no limits.
