CHAKALAKA – A South African delight!
Ingredients for 3-4 persons:
- 1 large chopped onion
- 2-3 cloves of chopped garlic
- 1 green chopped pepper
- 1 red chopped pepper
- 1 yellow chopped pepper
- A thumbs piece of fresh ginger (tip: peel and freeze it, grate it from a frozen state)
- 1 red chopped chilli, or 1 large ts Sambal Oelek (I think the latter gives the best flavour)
- 2 tbs curry powder of good quality
- 4 carrots, torn
- 2 tablespoons tomato paste
- 1 box of chopped tomatoes
- 1 box of tomato beans
- Lots of fresh or dried thyme
- Salt, pepper
This is how you do it:
Fry the onion and garlic until it’s soft and smells good. Add ginger and pepper and let it simmer for a few minutes. Add the rest of the ingredients and stir well. Pour in some water if needed. There is usually enough liquid in the carrots, tomatoes and beans. Let it simmer for 5-10 minutes, stirring occasionally. Spice up if needed. I like to use Vegeta instead of salt (google, it is a kind of broth salt sold in, for example, international stores).
Serve red hot, preferably with some good bread.
