Bite Sized Balls – ”Vetkoekies” –  under 3 minutes with a Thermomix

Waste no time with proofing –  quick snacks and an excellent lunch box idea!  Savoury or sweet – use your own imagination….

1 Egg  ;  Milk  160g / 150 ml  ;  Salt ½ tsp  ;  Cream 10ml / 2tsp  ;  All purpose flour 260g / 2k / 250ml ; Baking Powder 3tsp ; White Sugar 20g / 1.5 Tblsp (or a spoon more J ); 

Total PREPARE Time: 2 minutes, 40 seconds

Product Storage Time:  Three days at most – can be frozen for much longer!

HOW TO MAKE YOUR VETKOEKIES:

Step 1:   Always add the fluids FIRST

Place the egg, milk, salt and cream in your bowl.  Fit the measuring cup.

Set for 10 seconds at speed 4.5

Step 2:   Simply add the rest to your milk mixture

Add the rest of the ingredients to the milk mixture (Flour, Baking Powder and White Sugar.

Set  for 2 minutes, 30 seconds on KNEAD

Pause your process after 30 seconds – scrape down the sides and continue for the next 2 minutes.

Check your consistency – the dough should be somewhat runny, but easy enough to scoop with a tablespoon into hot oil.  Add a tad more milk or a bit more flour for the perfect somewhat runny, yet doughy texture. If you add anything, knead for another 20 seconds.

In the meantime….

Heat up a big pot of oil on your cooker/ stove.  (Approximately 7 cm deep). The oil should be heated to a high temperate and JUST before you scoop your dough (tablespoons full) into the oil – turn the heat down with a quarter of your settings.    Ensure your balls fry slowly enough to be cooked right through and have a crispy brown crunch to them as well. Should the frying process become a little slow… just add more heat to the oil, and remember to turn it down again – adjust the oil temperature until you are confident with the process. Don’t burn the outside but ensure a thoroughly cooked-through little vetkoekie!

Your balls will turn themselves around as they cook – this is quite magical –  check the short video:

Remove your vetkoekies from the oil, strain them on kitchen towels – and add any imaginable fillings or spreads on them.   You can have them nice and warm and even cooled down.

What comes to mind … curry mince, cheese, jam & cream ,  butter ,  fish paste – !  Really – ANYTHING – This can even be served with soup – with your tea or as a lazy snack anywhere, any time!

HOW DO I STORE THIS RECIPE?

These balls are best eaten immediately ( who can resist anyways? ) or they can be kept in an air-tight container in the fridge and can even be frozen – for a good 3 weeks I’d guess…. (preplanned lunch box MAGIC!) To use them from the freezer, let them outside the fridge until they reach room temperate (approx. 30 minutes).. (pending your weather) – or even better – put them in the fridge the night before.

HOW DO YOU SERVE THIS RECIPE?

There are no limits – it’s a great snack box treat.  You can also serve this with soup and stews.    Serve them hot or cold with any imaginable filling.  Butter, cheese, cream, jams, cold meats, pastes, mayonnaise, pestos, bacon jamsoup …   there is simply, just NO limit.
