40 ONE POT MEALS – EEN POT GEREGTE – NORMAL STOVE/COOKER
1. Creamy Chicken and Rice
Ingredients:
2 garlic cloves, 1 onion, 2 tbsp olive oil, 300g chicken breast (cubed), 200g rice, 800ml chicken stock, 100ml cream, salt and pepper
Steps:
- Chop garlic and onion. Sauté in oil over medium heat until soft.
- Add chicken, cook for 5–7 minutes until browned.
- Add rice and stock. Bring to boil, then reduce heat and simmer covered for 20 minutes.
- Stir in cream, season, and serve.
2. Spaghetti Bolognese
Ingredients:
1 onion, 2 garlic cloves, 1 carrot, 2 tbsp oil, 400g minced beef, 400g chopped tomatoes, 50g tomato paste, 500ml water, 250g spaghetti
Steps:
- Finely chop the onion, garlic, and carrot. Sauté in oil until soft.
- Add beef, cook until browned.
- Add tomatoes, paste, water, and spaghetti. Simmer for 20 minutes, stirring occasionally, until pasta is cooked.
3. Thai Green Curry
Ingredients:
1 onion, 2 garlic cloves, 1 tbsp green curry paste, 2 tbsp oil, 400g chicken thighs, 400ml coconut milk, 200g mixed veg, salt
Steps:
- Sauté chopped onion and garlic in oil.
- Add curry paste and fry for 1 minute.
- Add chicken, cook 5 minutes.
- Add coconut milk and vegetables, simmer 15 minutes.
4. Beef Stroganoff
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 400g beef strips, 200g mushrooms, 100ml cream, 1 tsp mustard, salt and pepper
Steps:
- Sauté onion and garlic in oil.
- Add beef and mushrooms, cook until browned.
- Stir in cream and mustard. Simmer for 5 minutes, season to taste.
5. Lentil Dahl
Ingredients:
1 onion, 2 garlic cloves, 1 tsp cumin, 1 tsp turmeric, 2 tbsp oil, 200g red lentils, 600ml water, 400ml coconut milk, salt
Steps:
- Sauté onion and garlic with spices in oil.
- Add lentils and water, bring to a boil. Simmer for 20 minutes.
- Stir in coconut milk, cook 5 minutes more.
6. Chilli Con Carne
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 400g beef mince, 1 can kidney beans, 400g chopped tomatoes, 1 tsp chilli powder, 1 tsp cumin, salt
Steps:
- Sauté onion and garlic in oil.
- Add beef and spices, cook until browned.
- Add beans and tomatoes. Simmer for 20 minutes.
7. Chicken Alfredo Pasta
Ingredients:
2 garlic cloves, 2 tbsp butter, 400g chicken, 300g pasta, 700ml milk, 100ml cream, 50g Parmesan, salt and pepper
Steps:
- Sauté garlic in butter. Add chicken, cook until browned.
- Add pasta and milk, bring to a simmer and cook until pasta is done.
- Stir in cream and Parmesan. Cook 2 minutes more.
8. Tuna Pasta Bake
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 1 can tuna, 300g pasta, 500ml milk, 50g cheese, 1 tsp mustard
Steps:
- Sauté onion and garlic.
- Add milk and pasta, cook until pasta is tender.
- Stir in tuna, cheese, and mustard. Heat through.
9. Vegetable Stew
Ingredients:
1 onion, 2 garlic cloves, 2 carrots, 1 courgette, 200g potatoes, 2 tbsp oil, 600ml vegetable stock, herbs
Steps:
- Chop and sauté all veg.
- Add stock and herbs, bring to boil.
- Simmer 25 minutes, until vegetables are soft.
10. Chicken Noodle Soup
Ingredients:
1 onion, 2 garlic cloves, 2 carrots, 200g chicken, 1L chicken stock, 150g noodles, parsley
Steps:
- Sauté onion, garlic and carrots.
- Add chicken and stock, simmer 15 minutes.
- Add noodles, cook 10 minutes. Garnish with parsley.
11. Sausage Casserole
Ingredients:
1 onion, 2 garlic cloves, 6 sausages, 400g baked beans, 400g chopped tomatoes, 2 tbsp oil, herbs
Steps:
- Slice sausages and brown them in oil. Remove and set aside.
- Sauté chopped onion and garlic.
- Add sausages back with beans, tomatoes, and herbs.
- Simmer for 20 minutes.
12. Curry Lentil Soup
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 200g red lentils, 700ml water, 1 tsp curry powder, 1 carrot, salt
Steps:
- Sauté onion, garlic, and curry powder.
- Add lentils, diced carrot, and water.
- Simmer for 20 minutes.
- Blend for smooth texture if desired.
13. Minestrone Soup
Ingredients:
1 onion, 1 celery stick, 2 carrots, 1 courgette, 2 tbsp oil, 400g chopped tomatoes, 700ml stock, 100g pasta, 1 can beans
Steps:
- Sauté all chopped veg in oil.
- Add tomatoes, beans, stock, and pasta.
- Simmer for 20 minutes until pasta and veg are tender.
14. Butter Chicken
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp butter, 400g chicken, 200g tomato purée, 100ml cream, spices
Steps:
- Sauté onion and garlic in butter.
- Add chicken, cook until sealed.
- Add purée and spices, simmer 15 minutes.
- Stir in cream, heat through.
15. Mac and Cheese (One Pot)
Ingredients:
300g macaroni, 600ml milk, 100ml cream, 150g cheese, salt, 1 tsp mustard
Steps:
- Add macaroni and milk to pot, bring to simmer.
- Stir frequently for 12–15 minutes until pasta is soft.
- Add cream, cheese, mustard. Stir until smooth.
16. Mushroom Risotto
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 300g risotto rice, 100g mushrooms, 900ml stock, 50g Parmesan
Steps:
- Sauté onion and garlic. Add mushrooms.
- Stir in rice and toast 1–2 minutes.
- Add warm stock gradually, stirring until absorbed.
- Cook 20 minutes. Add Parmesan at the end.
17. Sweet Potato Chickpea Curry
Ingredients:
1 onion, 2 garlic cloves, 1 tsp curry powder, 2 tbsp oil, 400g sweet potato, 1 can chickpeas, 400ml coconut milk
Steps:
- Sauté onion and garlic in oil.
- Add curry powder, cook 1 minute.
- Add sweet potato and chickpeas, stir.
- Add coconut milk. Simmer 20 minutes until soft.
18. Spanish Rice
Ingredients:
1 onion, 1 bell pepper, 2 tbsp oil, 300g rice, 600ml stock, 1 tsp paprika, 200g chopped tomatoes
Steps:
- Sauté onion and pepper.
- Add rice and paprika, stir 1 minute.
- Add tomatoes and stock. Cover and simmer 20 minutes.
19. Baked Beans and Sausage
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 6 sausages, 400g baked beans, 400g chopped tomatoes, herbs
Steps:
- Slice and brown sausages, remove.
- Sauté onion and garlic.
- Add sausages back, plus beans, tomatoes, herbs. Simmer 20 minutes.
20. Prawn and Pea Risotto
Ingredients:
1 onion, 2 garlic cloves, 2 tbsp oil, 300g risotto rice, 800ml stock, 150g peas, 200g prawns
Steps:
- Sauté onion and garlic.
- Add rice, stir for 1 minute.
- Gradually add stock, stirring constantly.
- After 15 minutes, add prawns and peas. Cook until done.
21. Chicken and Broccoli Pasta
Ingredients:
2 garlic cloves, 1 onion, 2 tbsp oil, 300g chicken (cubed), 300g pasta, 600ml stock, 150g broccoli, 100g cream cheese, salt and pepper
Steps:
- Sauté chopped onion and garlic in oil until soft.
- Add chicken, cook until browned.
- Add pasta and stock, bring to boil, then simmer 10–12 minutes.
- Add broccoli and cream cheese, cook 5 more minutes until broccoli is tender.
22. Tuna Risotto

1 onion, 2 garlic cloves, 2 tbsp oil, 300g risotto rice, 800ml stock, 1 can tuna, juice of 1 lemon, salt and pepper

- Once rice is cooked, stir in tuna and lemon juice.
