POEDING OP DIE STOOF – STOVE PUDDING

Mains: cornstarch, maizena, eggs, eiers

“Poeding op die stoof” is a traditional South African dessert, similar to a pudding or custard, cooked on the stovetop. 

2 cups milk

1/2 cup sugar

2 tablespoons cornstarch

1/4 teaspoon salt

1/2 teaspoon vanilla extract

2 large eggs

In a medium saucepan, combine milk, sugar, cornstarch, and salt. Whisk until the cornstarch is dissolved.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in the vanilla extract.

Beat in the eggs until well combined.

Return the saucepan to low heat and cook, stirring constantly, until the pudding thickens and coats the back of a spoon.

Remove from heat and let cool slightly before serving.
